I’ve never looked back, it prevents the chicken from drying out during the frying process, so the chicken stays juicy and tender on the inside!!! I’m definitely gonna dry the buttermilk next, thank you!!!

I used to soak it in a buttermilk bath, but my kids are allergic to cows milk. So, I usually do a marinade soak of some sort, dry it, batter & sit and then fry. But I will have to try brining it.

Like you, I use my Dutch oven for frying. Seasoned buttermilk also makes a great brine. Michael Ruhlman’s fried chicken recipe on the Le Creuset website is fantastic! The seasoned flour is the perfect level of seasoning! So glad to have found your site!
