This is one of my favorite pasta recipes, and although it may sound complicated it’s pretty easy.
Use any piece of chicken you like although I find the thighs are not only cost-effective they provide great flavor and the fat keeps it from drying out!
Here’s what you need…….
Chicken
2 lbs chicken thighs
Salt
2 tablespoons vegetable oil
1 cup buffalo sauce
Spaghetti
1 lb box of spaghetti
4 tablespoons all-purpose flour
4 tablespoons butter + 2 tablespoons butter
2 cups milk
5 oz crumbled blue cheese
1 tablespoon buffalo sauce
1 cup starchy water
Chopped Parsley
For Chicken
pre heat oven to 400°
Heat pan, add vegetable oil and cook on both sides, 5 minutes on both sides.
Place chicken on roasting pan.
Pour 1 cup of buffalo sauce evenly on top of chicken.
Put chicken in oven and bake for 20 minutes.
For spaghetti
Boil water for spaghetti.
Cook spaghetti just until al dente.
Melt 4 tablespoons of butter add flour, to make roux slowly add milk.
Season with salt.
Beat sauce into a smooth consistency.
Add crumbled blue cheese, keeps stirring until sauce is smooth.
Add cooked pasta with 1 cup of starchy water.
Stir in leftover 2 TBS butter.
Mix everything up well, place top on pan and turn heat to low.
Let simmer for about 5 minutes, or until pasta is finished.
Add fresh parsley.
Serve warm topped with cooked buffalo chicken and sprinkle with blue cheese.
