This easy recipe is something I make at least once a month for our family. We love Mexican food, and eat some variation of the more traditional dishes throughout the month.
There are so many kid friendly Mexican dishes, (most likely attributed to the cheeses) my minions even enjoy the spiciness of the food!
This is a basic taco recipe I use on those time constrained weekday nights when I need to quickly throw something together.
The kids love it, the adults love it, it’s easy, and nutritious. Who doesn’t love tacos?!
Tacos

Ingredients
- 1 Lb Grass Fed Organic Ground Beef
- 1/2 small red onion
- 3 garlic cloves
- 1 Tablespoon brown sugar
- 2 teaspoon smoked paprika
- 1 teaspoon ground oregano
- 1 Tablespoon ground cumin
- 1/4 teaspoon ground celery seed
- 2 Tablespoon tomato paste
- 1 beef bouillon
- 2 cups water
- About 2 teaspoons but by all means salt to taste :)
- 8- 10 soft tortillas
- Lettuce
- grape tomatoes sliced in half
- Shredded Cheddar/ Monterey Jack Cheese
- Sriracha hot sauce
- Sour Cream
Instructions
- Brown ground beef.
- In food processor mix onions, garlic and the rest of all seasonings and spices.
- Add the browned meat, mix everything together and cook.
- Mix in tomato paste.
- Melt beef bouillon in 2 cups of warm water.
- Add to meat and let everything simmer on medium high heat for about 10 minutes.
- Salt to taste
- To assemble
- Using a warm tortilla layer the taco meat, cheese, lettuce, tomatoes and top with a little more cheese.
- Drizzle with Sriracha hot sauce and dip in sour cream.

All of your pictures look so yummy! We’ve actually had a Mexican inspired dish yesterday, and my family loved it! I may bite the bullet and try this as well. Simple is always best. Just a quick question of for you–if you were going to use corn tortilla, how would you prep it?

Corn tortillas tend to be tougher and not as soft as flour tortillas but that’s no problem, just heat up both sides on a hot skillet. Fill it up as you would the flour tortilla it’ll still be yummy! Thank you Kalley!
