This quick and healthy side dish is just what you need to compliment a summer meal. The roasting pan give the potatoes a crispy and savory coating while the inside is slightly sweet with a soft texture. Paired with a lean protein this side dish creates a simple and fuss free meal.
All you need is……
4-5 Medium sized Sweet Potatoes
Extra Virgin Olive Oil
Salt & Pepper
Pre-heat oven to 400ᴼ
Coat baking pan with olive oil and place in oven for about 10 minutes, or until the pan is piping hot!
While pan is heating in the oven cut potatoes into ½ in wedges.
Wash them ad put in bowl with ¼ cup of olive oil.
Add salt and pepper.
Toss everything together and place potatoes on hot baking pan in one even layer.
Let bake for 35- 40 minutes until brown and serve.
