This is an easy and simple recipe I came up with to get rid of some leftover coconut I had up in my cupboards. I was pleasantly surprised at what had happened. It’s kind of like a scone, which is just a biscuit with sugar and an egg, but it’s not too sweet. No milk needed. This will be great served with your morning cup of Joe or Afternoon Tea. 4 tablespoons softened butter
½ cup sugar
1 cup sweetened coconut flakes
1 large egg
¼ teaspoon baking soda
¾ cup Bread Flour (I use King Authur Brand)
1 teaspoon vanilla
Pre- heat oven to 350ᴼ
Cream butter, sugar, and coconut
Add egg and mix well.
Sift flour and baking soda.
Mix all ingredients together just until incorporated and add vanilla.
Drop 2 tablespoons of mix on baking sheets
Bake for about 10 minutes.
