Did you know that almost everyday in the year is a food holiday?! Well I didn’t, until I started blogging, it simply gives me another reason to enjoy and celebrate all my favorite foods and dishes throughout the year.
Today January 12, 2014, is none other than Curry Chicken Day!
When I think of curry I think of Caribbean but it’s actually original to the Asian continent, the influence of curry came from the many Indians who settled the Caribbean.
Curry is one of those flavors most people usually Love or Hate, I personally sit somewhere in between, it’s a taste that I have become accustomed to, and when I mix my Southern roots into the dish it becomes more than tolerable but downright delicious.
This recipe is one I’ve been making a while now, and my family absolutely loves it. I took flavors from a different African diaspora and made it one delightful and flavorful dish!
The Fried chicken is beautifully seasoned and fried, then smothered in a delicious and hearty curry gravy with onions. Served over top of rice and greens this makes a whole and perfect meal!

4.32 oz Chicken drumsticks
1 teaspoon garlic salt
1 teaspoon onion powder
1 teaspoon quality curry powder
2 Tablespoons soy sauce
1 cup flour
1 teaspoon kosher salt
1/4 teaspoon freshly grounded pepper
1 sliced onion
1/4 cup butter /half-stick
1/4 cup flour
1 cup water
1 tablespoon chicken base
1 can evaporated milk
1 Tablespoon brown sugar
1/4 teaspoon black pepper
Start by washing off the chicken.
Sprinkle chicken with garlic salt, onion powder and curry powder.
Pour soy sauce over top and rub sauce and seasoning evenly among the chicken.
In separate bowl, mix, flour, salt and pepper.
Heat oil to 375°
Fry chicken for 15 minutes until golden brown.
Move chicken to paper towel lined/brown bag lined plate.
Pre heat oven to 400°
In hot skillet melt butter, add 1/4 cup flour, to make roux.
Add curry mix in.
Whisk in can of evaporated milk. Slowly add 1 cup water with chicken base,and brown sugar while continuing to whisk.
Add sliced onions and pour in the remaining 3/4 cup of water.
Whisk everything into smooth gravy.
Place chicken into baking dish, and pour gravy on top.
Cover with foil and bake at 400° for 30 minutes.
