Nough said now let’s get to this recipe!

10 oz Mexican Chorizo

5 Eggs

2 potatoes chopped into squares

1/2 onion

2 garlic cloves minced

1 cup Mozerrella Cheese

1/2 cup cheddar cheese

 

Preheat oven to 400°. Lightly coat hot pan with cooking oil. Add potatoes in one even layer. Let sit and get golden brown for about 3 minutes then start tossing, add onion and garlic, mix it up. Take chorizo out of casing, add to pan and mix in well let everything continue to cook. In a small bowl beat eggs. When chorizo starts to brown a bit add eggs and mix in.  Sprinkle shredded mozzarella on top and bake in oven for 20 to 25 minutes, or until cheese is bubbly brown. When finished put mix into warm tortillas add a bit of cheddar cheese on top and roll into burrito or eat it like a taco.

Enjoy this no fuss breakfast, or brunch, shoot I’ll even eat them at lunch if there is any leftover, which there rarely is, cause they are so darn good.

All you need is…….

4 Medium Red Potatoes

3 good Tablespoons Extra Virgin Olive Oil

½ Tablespoon Seasoning Salt

Cut potatoes into small squares and wash off.

In a cast iron skillet, heat extra virgin olive oil.

When hot add potatoes in an even layer.

Let brown for about 5 minutes without messing with it.

Add Season Salt and toss everything together mixing it well, continue to toss for about 5 more minutes.

Turn heat to low and put top on pan.

Let potatoes cook for five minutes toss again and put top on for another 5 minutes.

Now they’re ready!

You will be pleasantly surprised how so little effort plus 3 ingredients can make such a delicious breakfast.
